It is also a good source of complex carbohydrates that provide stable energy throughout the day and keep your little ones feeling full and satisfied for a longer period.
Spinach
Green indicates folate, an important B vitamin needed to make new blood cells and for the development of a healthy nervous system. Spinach is also a bone building superfood. It is an excellent source of plant-based calcium that strengthens growing bones, spinach also provides a significant amount of magnesium which helps transport calcium into the bones and protect the skeletal integrity.
Sprouted Mung Beans
Mung beans are legumes that have powerful healing properties due to their high content of antioxidants, vitamins, and minerals that are essential to our health. We sprout our mung beans to make them easier to digest and to avoid symptoms such as gas and bloating. The process of sprouting increases the nutritional value of the beans, it also gets rid of the anti-nutrient compounds that interfere with nutrient absorption.
Coconut Milk
We use coconut milk as a substitute for dairy in this dish to keep it free of allergens and to give it a thick and creamy texture.
Tomato
Tomatoes are an excellent source of vitamin C ! When obtaining iron from plant-based foods, it is important to pair it with foods rich in vitamin C because vitamin C is needed for plant-based iron to get absorbed into the blood and be used by the body.
