Sprouted Mung Beans
Mung beans are legumes that have powerful healing properties due to their high content of antioxidants, vitamins, and minerals that are essential to our health. We sprout our mung beans to make them easier to digest and to avoid symptoms such as gas and bloating. The process of sprouting increases the nutritional value of the beans, it also gets rid of the anti-nutrient compounds that interfere with nutrient absorption.
We use coconut milk as a substitute for dairy in this dish to keep it free of allergens and to give it a thick and creamy texture.
Tomatoes are an excellent source of vitamin C ! When obtaining iron from plant-based foods, it is important to pair it with foods rich in vitamin C because vitamin C is needed for plant-based iron to get absorbed into the blood and be used by the body.
STOVE – From Frozen
Gently heat in pan for 3-5 mins, or until thawed
Alternatively, Microwave – From Frozen
60 – 90 seconds on full power, stirring between 30 second intervals
