Mexican Fiesta

Brown Rice

Unlike white rice which is stripped off its fiber, proteins, vitamins and minerals during processing, brown rice maintains all its valuable nutrients. An excellent source of dietary fiber and complex carbohydrates that boost your baby’s energy while keeping blood sugar levels balanced. Brown Rice is also a source of magnesium , an essential mineral for bone development and for a healthy functioning nervous system. Brown rice provides your baby with a generous amount of the mineral zinc , a critical nutrient needed for all body cell processes. At this age your baby’s body is working so hard to grow, using up zinc at a rapid rate. that’s why it is critical to look out for adequate zinc intake to avoid deficiencies that could lead to growth delays.

Avocado

Our brains are made mostly of fat, and so are avocados! Avocados contain high amounts of healthy fats that aid the development of your baby’s brain and protects its health. The green color of avocados indicates they are high in folate , an important B vitamin that is essential for the formation of red blood cells.

Black Beans

Black beans are packed with protein, fiber, and many vitamins and minerals that are important for the health of your loved ones. They provide bone building nutrients such as calcium ; the main component that makes up our bones. As well as magnesium; a mineral that is needed for calcium to get absorbed into the bones hence protects the skeletal integrity.

Green Peas

These tiny pods are sweet and delicious with an impressive nutritious value. They are rich in iron and folate which work together to build healthy new red blood cells. Peas also help boost the immune system by providing an abundance of antioxidants including vitamins A & C.

Bell Pepper

Red Bell peppers are one of the richest food sources of vitamin C! When obtaining iron from plant-based foods, it is important to pair it with foods rich in vitamin C because vitamin C is needed for plant-based iron to get absorbed into the blood.

Carrots

Carrots are famous for their high levels of vitamin A , an antioxidant that helps the body’s defense against disease. Vitamin A is also essential for the development of healthy eyes.

Coconut Milk

We use coconut milk as a substitute for dairy in this dish to keep it free of allergens.
